Amidst rising obesity rates in the EU and the significant public health impact of excessive sugar consumption, the debate on reducing sugar through reformulation with sweet proteins derived from precision fermentation gains prominence, presenting a viable alternative to traditional sugars and conventional sweeteners. We conducted two studies to investigate the effects of health (emphasizing sugar reduction) versus naturalness (highlighting sweet proteins as alternatives to artificial sweeteners) message framing on the acceptance of products reformulated with sweet proteins. Study 1 (N = 296, Denmark) evaluated the impact of health and naturalness message framing on attitudes towards such reformulations. Study 2, in a cross-cultural sample (N = 3,000 Denmark, Germany, and Poland), tested the mediating role of health perceptions and the moderating effects of BMI and guilt (Study 2a), as well as naturalness perceptions, sweetener use, and pleasure (Study 2b) on product attitudes. Results of Study 1 indicated that healthiness perceptions had a more persuasive influence than naturalness perceptions. The cross-cultural findings of Studies 2a and 2b revealed that BMI, sweetener usage frequency, anticipatory guilt, and pleasure can modulate these effects. These insights suggest that while both perceived healthiness and naturalness shape attitudes towards sweet protein-enriched products, the significance of health perceptions prevails, with anticipatory emotions of guilt enhancing this influence, particularly when sweet proteins substitute added sugar. Such evidence holds substantial implications for strategies aimed at reducing sugar consumption and fostering the acceptance of products containing alternative sweeteners.

Consumers' recognition and understanding of food characteristics can have an important role when making purchase decisions. The current study analysed consumer preferences for bread, an important food in the diets of Central European countries. The study included a conjoint experiment on a representative sample of 547 adult consumers in Slovenia. The following bread attributes: functional ingredients (chia seeds, linseed, quinoa, and Tartary buckwheat); nutritional claims (low salt, high fibre, and high protein); and other claims (organic, free from additives, flour from Slovenia, and wholegrain) were studied. The results showed the strongest relative importance for functional ingredients (a mean relative importance of 83.9%). In addition, a deeper insight into consumer preference was investigated by a recently developed modular instrument for food-related lifestyles. Latent class cluster analysis (LCA) enabled the identification of four consumer segments (uninvolved, conservative, health-conscious, and moderate) with different preferences toward selected functional ingredients, nutrition, and other claims. The results provide insights that allow for a better understanding of consumer preferences for functional ingredients and claims, and new perspectives for bread marketing to different consumer segments based on food-related lifestyles. Identifying the drivers that affect bread purchasing and consumption can support reformulation activities and product promotion in the direction of reinforcing healthier food choices.

When the COVID-19 pandemic subsided, the war in Ukraine led to further disruptions in consumers' daily behaviours, with rising prices for food and energy. We conducted a survey study on self-reported changes in food-related consumer behaviour in ten European countries and compared the results to a similar study conducted two years ago. A latent class cluster analysis distinguished five clusters and showed that different types of consumers can be distinguished based on how they react to the crisis as regards their eating habits. 19% of survey participants reported no major changes, and 32% reported changes mostly in terms of more price sensitivity. Among those that reported changes beyond reacting to higher prices, there are indications of more mindful eating and more deliberate choices. The changes already found earlier in response to the COVID-19 pandemic therefore seem to have been strengthened and supplemented by reactions to price increases. The results present a challenge to the food industry in terms of supplying healthy and sustainable food at affordable prices.

Information about food is available from several sources using a variety of communication channels. Following an overview of the different types on food information, the most important source/channel combinations are discussed. The key steps in processing the information toward making a food choice are discussed: consumer's exposure to such information, the attention the consumer pays to it, the understanding and/or liking of the information, as well as the importance of motivation, knowledge, and trust. To support consumers in making informed food choices, it is recommended to ensure that food information is easy to understand and targeted to consumers with a specific need or interest, align the information on the food label with the communication about the food elsewhere ("off label"), provide (non-expert) influencers with transparent information to enable an increase in the trustworthiness of their communications on the web in on social media. Furthermore, increase cooperation between authorities and food producers to create standards that fulfill the legal requirements and are feasible as label elements. Improving food literacy among consumers by including it in formal education would provide consumers with better nutrition knowledge and skills to interpret food-related information in a manner that supports informed choices.

Current patterns of meat consumption are considered unsustainable. Plant-based products are presented as a solution. However, while some plant-based products thrive, others do not make the cut due to the information "framing" effect issues related to the way information is presented to the consumers. Information on the nutrition and health properties of food products are usually made available at the point of purchase, but their effect on consumer product evaluation and subsequent purchase intent can also occur later, during or after consumption. This research demonstrates that the effect of nutrition information on product evaluation and purchase intention depends on when such information is made available-before first tasting or after first tasting-and that the information interacts with the taste experience in its effect on product evaluation and subsequent purchase intent. Using three plant-based products as an example, we conducted a cross-cultural experimental sensory evaluation with temporal order of information as the main between-subject experimental condition (informed before taste vs. informed after taste vs. control condition), and product experience phase (expectation vs. experience vs. post-experience phase) and information content as within-subject conditions. Information content had two levels: lower vs. higher share of oat protein in the product (i.e., source of protein vs. high in protein). The results indicate that information generally increases consumers' purchase intentions with information before tasting having a higher weight when compared to the condition when information was presented after tasting. Presenting the information before tasting also mitigates a drop in the evaluation of taste after tasting, observed in the two other conditions. Further, taste acts as a healthiness cue, but the direction of the inference depends on the availability of health-related information: tasting in the informed condition increased the healthiness perception, whereas tasting in the uninformed condition had the opposite effect. Giving the information before the first tasting also increased the weight of healthiness as compared to taste in the formation of purchase intentions. These findings contribute to a better understanding of the effect of temporal order of information and product tasting have on the consumers' product evaluations of plant-based products from theoretical and managerial perspectives.

Evidence shows that numerous family-related variables influence parents' use of different food parenting practices (FPP), but less is known about the influence of parents' work-related variables on their use of FPP, and their own and their children's outcomes in the food domain. To fill this gap, the present study explored intra-individual and inter-individual effects between work-to-family enrichment (WtoFE), parents' monitoring practices, the adolescent's perception of their parents' monitoring practices, and the three family members' satisfaction with food-related life (SWFoL), in different-sex dual-earner parents with adolescent children. The mediating role of monitoring between WtoFE and SWFoL was also tested. A sample of 430 different-sex dual-earner parents and one of their adolescent children (average age 13.0 years, 53.7% female) were recruited in Rancagua, Chile, during March and June 2020. The three family members answered the monitoring dimension of the Compressive Feeding Practices Questionnaire and the Satisfaction with Food-Related Life Scale. Parents answered a measure of WtoFE based on the Work−Home Interaction Survey. Analyses were conducted using the Actor−Partner Interdependence Model and structural equation modelling. Results showed a positive association between WtoFE and SWFoL, directly (p < 0.001) and through monitoring in fathers (95% confidence interval [0.010, 0.097], actor effect). The father's (p = 0.042) and mother's (p = 0.006) WtoFE was positively associated with their adolescent's SWFoL (partner effects). The father's (p = 0.002) and mother's (p = 0.036) WtoFE were positively associated with their own monitoring (actor effect), while only the father's WtoFE (p = 0.014) was positively associated with the adolescent's perception of their parents' monitoring (partner effect). The father's (p = 0.018) and mother's (p = 0.003) monitoring, as well as the adolescents' perception of their parents' monitoring (p = 0.033), were positively associated with their own SWFoL (actor effects), while the mother's monitoring (p = 0.043) was also associated with the father's SWFoL (partner effects). Findings suggest that both parents' WtoFE improved their monitoring practices, which, in turn, improved their own SWFoL and their adolescent child's SWFoL. Policymakers and organizations must aim to promote the WtoFE of working parents.

Reciprocal family influences in the food domain have been little explored, particularly during the COVID-19 pandemic. To fill in this gap, this study explored actor and partner effects between parents' food modeling and parents' and their adolescent children's diet quality and satisfaction with food-related life (SWFoL); and the mediating role of diet quality between modeling and SWFoL. This study used a cross-sectional design. A sample of 430 different-sex dual-earner parents and one adolescent child were recruited in Rancagua, Chile, between March and June 2020. Parents answered the modeling dimension of the Comprehensive Feeding Practices Questionnaire. Parents and adolescents answered the Adapted Healthy Eating Index (AHEI) and the SWFoL Scale. Analyses were conducted using the Actor-Partner Interdependence Model and structural equation modeling. Results showed that one parent's modeling enhanced diet quality for themselves, their partner, and the adolescents. Parents' modeling was associated with their own SWFoL, directly and via their own diet quality. There were positive associations between mothers' modeling and adolescents' SWFoL; between mothers' diet quality and fathers' SWFoL; and between mothers' modeling and fathers' SWFoL via the fathers' diet quality. Parents' modeling can improve the three family members' diet quality, while mothers' modeling and diet quality showed to improve fathers' and adolescents' SWFoL.

This study examined the relationships between diet quality, satisfaction with food-related life and life satisfaction in mother-adolescent dyads. The sample consisted of 470 mother-adolescent dyads in Temuco, Chile. Mothers and adolescents responded to the Adapted Healthy Eating Index, Satisfaction with Life Scale, and the Satisfaction with Food-related Life scale. Data was analyzed using the Actor-Partner Interdependence Model (APIM) and Structural Equation Modelling (SEM). Diet quality was associated with satisfaction with food-related life, which related to life satisfaction in mothers and adolescents. We did not find direct relationships between diet quality and life satisfaction for either dyad member. Adolescents' diet quality negatively affected their mothers' satisfaction with food-related life; adolescents' food-related life was positively associated with their mothers' life satisfaction. The mothers' satisfaction with food-related life played a mediating role between their own diet quality and life satisfaction. Mothers and their adolescent children affect one another in their dietary patterns and life satisfaction. Child-to-mother influences on food-related experiences show that adolescents' satisfaction with food-related life improves their own and their mothers' life satisfaction. Interventions to promote healthy eating habits must be addressed to both mothers and their adolescent children.

The Comprehensive Feeding Practices Questionnaire (CFPQ) has been evaluated in international studies, but the evaluation of its psychometric properties in Spanish, and in particular for parents of adolescents is still limited, and the invariance of measurement according to gender has not been evaluated. Therefore, the objectives of this study were: (1) To adapt the five-factor model of the CFPQ instrument to Spanish; (2) To examine the psychometric properties of this adaptation; and (3) To evaluate the measurement invariance of the model to verify the equivalence of measurement of the perceptions of food parenting practices between mothers and fathers belonging to nuclear, dual-earner families with adolescent children. Participants were 946 mothers and fathers from Southern Chile. Results showed that the conceptual equivalence for the CFPQ was achieved. An exploratory factor analysis was performed for a five-factor model: Monitoring, Child control, Restriction for weight control, Modeling and Environment. Horn's parallel analysis identified four factors, while factor loading analysis determined the removal of the environment factor. Confirmatory factor analysis presented good reliability values. Convergent and discriminant validity was confirmed, and medium-to-high levels of goodness of fit were obtained, eliminating two items. Results supported a final model of four factors and 19 items. Multigroup analysis of the measurement model verified the configural and metric invariance between fathers and mothers, while the scalar and strict partial invariance was verified. These findings are a relevant guide to measure factorial scores in the four-factor model of the CFPQ, establishing a characterization of feeding practices of parents and adolescents.

The outbreak of the coronavirus pandemic (Covid-19) has profoundly affected the food systems, leading to consumer concerns about the lack of reliability and safety of global foods and a growing trend towards consuming local foods. Consumers have formed multicultural identities, such as global identity and local identity, under the influences of global and local consumer culture. This study develops a conceptual model to examine the impact of consumer global-local identity, locavorism, and consumer xenocentrism on consumer attitudes towards and intentions to buy local foods during Covid-19 crisis. We conducted an online survey in China that measured the constructs using established scales. Using structural equation modelling to test the proposed hypotheses, we find that: a higher degree of global identity will lead to a higher degree of consumer xenocentrism, whereas a higher degree of local identity will lead to a lower degree of consumer xenocentrism; local identity significantly and positively predicts locavorism; contrary to the prediction, the impact of global identity on locavorism is not significant; a higher degree of consumer xenocentrism will lead to a lower degree of attitude towards buying local foods. Theoretically, our findings contribute to the understanding of literature on local food consumption, consumer global-local identity, and consumer xenocentrism. Local food marketers can obtain practical insights based on our findings.

For this study, the authors measured attitudes toward shopping for food and cooking, before and during the first lockdown due to the COVID-19 pandemic, among a sample of 526 Danish consumers, using an online survey. To analyse changes due to the lockdown, they applied a latent class Markov model, which revealed four states: middle of the road, love cooking (and like shopping), like shopping and cooking, and do not like shopping or cooking. In estimating transition probabilities, the findings reveal that most respondents remained in the same state before and during the lockdown, but those that changed were more likely to exhibit relatively higher liking of shopping and cooking. These states also reflect variations in people's food literacy and self-reported food consumption. Finally, respondents with stronger negative emotional reactions to the lockdown were more likely to change their states.

Este estudió examinó las interrelaciones entre calidad de la dieta, satisfacción con la alimentación -relacionada con la vida, y satisfacción con la vida en díadas madre-adolescente. Se reclutó una muestra de 470 díadas madre-adolescente en Temuco, Chile. Las madres y adolescentes respondieron al Índice de Alimentación Saludable Adaptado, Escala de Satisfacción con la Vida, y la Escala de Satisfacción con la Alimentación. Se analizaron los datos usando el Modelo de Interdependencia Actor-Pareja (APIM) y el modelado de ecuaciones estructurales. La calidad de la dieta está asociada con la satisfacción con la alimentación, y la última está asociada con la satisfacción con la vida, en madres y adolescentes. No se encontraron relaciones directas entre la calidad de la dieta y la satisfacción con la vida para ningún miembro de la díada. La calidad de la dieta de los adolescentes tuvo un efecto negativo en la satisfacción con la alimentación de las madres; la satisfacción con la alimentación de los adolescentes estuvo positivamente asociada con la satisfacción con la vida de sus madres. La satisfacción con la alimentación de las madres tuvo un papel mediador entre la calidad de su propia dieta y su satisfacción con la vida. Las madres y sus hijos adolescentes se influencia mutuamente en sus hábitos alimentarios y satisfacción con la vida. Se encontró que las influencias hijo/a-madre tienen un impacto en las experiencias relacionadas con la comida, mostrando que la satisfacción con la alimentación de los adolescentes potencia su propia satisfacción con la vida y la de sus madres. Las intervenciones para promover hábitos saludables en la alimentación deben dirigirse tanto a las madres como a sus hijos adolescentes.


O estudo examinou as interrelações entre qualidade da dieta, satisfação com a alimentação e satisfação com a vida em pares de mães e adolescentes. Foi recrutada uma amostra de 470 pares mãe-adolescente em Temuco, Chile. As mães e adolescentes responderam o questionário do Índice Adaptado de Alimentação Saudável, a Escala de Satisfação com a Vida e a Escala de Satisfação com a Alimentação. Os dados foram analisados com o modelo de interdependência ator-parceiro (APIM) e modelagem de equações estruturais. A qualidade da dieta está associada com a satisfação com a alimentação, e esta está associada com a satisfação com a vida, entre mães e adolescentes. Tanto nas mães quanto nos filhos adolescentes, não foram observadas relações diretas entre qualidade da dieta e satisfação com a vida. A qualidade da dieta dos adolescentes teve um efeito negative sobre a satisfação das mães com a alimentação; a satisfação dos adolescentes com a alimentação esteve associada positivamente à satisfação das mães com a vida. A satisfação das mães com a alimentação teve um papel mediador entre a qualidade de sua própria dieta e a satisfação com a vida. As mães e seus filhos adolescentes afetam uns aos outros nos padrões de dieta e satisfação com a vida. Foram identificadas influências de filho para mãe nas experiências relacionadas à alimentação, o que demonstra que a satisfação dos adolescentes com a alimentação potencializa a satisfação com a vida, tanto deles e quanto de suas mães. Devem ser realizadas intervenções no sentido de promover hábitos alimentares saudáveis entre as mães e seus filhos adolescentes.

The COVID-19 pandemic and especially the lockdowns coming with it have been a disruptive event also for food consumption. In order to study the impact of the pandemic on eating habits, self-reported changes in food-related behaviours were investigated in ten European countries by means of an online survey. A latent class cluster analysis distinguished five clusters and showed that different types of consumers can be distinguished based on how they react to the pandemic as regards their eating habits. While food-related behaviours were resilient for 60% of the sample, another 35% reported more enjoyment in cooking and eating, more time in the kitchen and more family meals. Among those, a slight majority also showed signs of more mindful eating, as indicated by more deliberate choices and increased consumption of healthy food, whereas a slight minority reported more consumption of indulgence food. Only 5% indicated less involvement with food. As the COVID-19 pandemic is a disruptive event, some of these changes may have habit-breaking properties and open up new opportunities and challenges for food policy and food industry.

Although recent literature has shown that switching to an insect-based diet could provide several relevant advantages-from a nutritional, environmental, economic and ecological point of view-the potential growth of insects as everyday food is still unclear. Despite a growing literature on consumer acceptance and product preference for insect-based food, a segmentation of this future and possible market has never been proposed. Therefore, in the present paper, a market segmentation based on the Food Related Lifestyle Scale (FRLS), was performed in order to predict consumers' willingness to eat (WTE) edible insects. Moreover, the role of perceived behavioural control is taken into account. Results shows that the novelty and benefits of insect consumption have generated much interest in edible insects amongst consumers belonging to the Rational cluster, who showed the highest intention to introduce insects in their diet, thus confirming the presence of a niche of "early adopters". In addition, perceived behavioural control was the major driver of intention. Implications for attempts to encourage people to incorporate insect-based foods into their diet are discussed, with special reference to the role of marketing campaigns.

Mothers and children presented positive spillovers between their own levels of satisfaction with food-related life and life satisfaction (p ≤ 0.01). No crossover effects were found between mothers and children (p > 0.1). This study results underscore the positive association between satisfaction with food-related life and life satisfaction among members of dual-earner families with adolescent children. Special efforts should be made by dual-earner parents to improve the variables related to their satisfaction with food-related life as well as their children's satisfaction.

Este estudio exploró las asociaciones spillover y crossover entre la satisfacción con la alimentación y la vida en madres, padres y niños adolescentes, en familias con dos fuentes de ingresos. El diseño del estudio es transversal con madres, padres y niños, realizado en Temuco, Chile. Los participantes fueron 303 parejas con ingresos (cada uno de los miembros) y sus hijos adolescentes (promedio de edad 13,3 años, 51,5% mujeres). Se utilizó un modelo de interdependencia actor-compañero (Actor-partner Interdependence Model - APIM por sus siglas en inglés) y modelos de ecuación estructural para investigar las asociaciones spillover (efecto actor) y crossover (efecto compañero) entre los miembros de las familias. En los resultados, la satisfacción con la alimentación de los padres estuvo positivamente asociada con su propia satisfacción vital (p ≤ 0,01), al igual con la satisfacción vital de su pareja (la madre, p ≤ 0,05), pero no con la satisfacción con la vida de su hijo adolescente (p > 0,1). Madres e hijos mostraron asociaciones spillover positivas entre sus propios niveles de satisfacción con la alimentación y la satisfacción con la vida (p ≤ 0,01). No hubo efectos crossovers entre madres e hijos (p > 0,1). Los resultados de este estudio destacan la asociación positiva entre la satisfacción con la alimentación y la satisfacción vital entre miembros de familias con dos ingresos e hijos adolescentes. Se deberían realizar esfuerzos especiales en las parejas con ingresos por ambas partes para mejorar las variables relacionadas con su satisfacción con la alimentación, así como también con de su hijos.


Este estudo explorou as associações de spillover e crossover entre a satisfação com a vida relacionada à alimentação e a satisfação com a vida em geral em mães, pais e filhos adolescentes em famílias com duas fontes de renda. O delineamento é de um estudo transversal em mães, pais e filhos em Temuco, Chile. Os participantes eram 303 casais com duas fontes de renda e seus filhos adolescentes (média de idade de 13,3 anos, sendo 51,5% do sexo feminino). Foram usados o Actor-partner Interdependence Model (APIM) e modelagem de equações estruturais para explorar as associações spillover (efeito de ator) e crossover (efeito de parceiro) entre membros da família. Nos resultados, a satisfação do pai com a vida relacionada à alimentação mostrou associação positiva com a satisfação em relação à própria vida (p ≤ 0,01), assim como, com a satisfação da parceira com a vida (a mãe, p ≤ 0,05), mas não com a satisfação do filho adolescente com a vida (p > 0,1). As mães e filhos mostraram desdobramentos positivos entre seus próprios níveis de satisfação com a vida relacionada à alimentação e a satisfação com a vida (p ≤ 0,01). Não foram encontrados efeitos crossovers entre as mães e os filhos (p > 0,1). Os achados do estudo sublinham a associação positiva entre a satisfação com a vida relacionada à alimentação e a satisfação com a vida em geral entre membros de famílias com duas fontes de renda e filhos adolescentes. Os casais com duas fontes de renda devem se esforçar para melhorar as variáveis relacionadas à sua própria satisfação e de seus filhos em relação à alimentação.

Abstract This study explored the spillover and crossover associations between depression and satisfaction with life, food-related life, and family life in dual-earner families. Questionnaires were administered to 303 dual-earner couples with adolescent children in Temuco, Chile. Both members of the couple answered the Depression Subscale of the Depression Anxiety and Stress scale - 21, Satisfaction with Life scale, Satisfaction with Food-related Life scale, and the Satisfaction with Family Life scale. Using the actor-partner interdependence model and structural equation modeling, we found that a man's depression was negatively associated with his own levels of satisfaction with life, family life, and food-related life as well as with his partner's (the woman's) levels of satisfaction with life and family life. The woman's depression was negatively associated with her own levels of satisfaction with life, family life, and food-related life as well as with her partner's (the man's) satisfaction with family life, but not with his level of life satisfaction. No crossover effects were found between the two members of the couple's depression and their satisfaction with food-related life. These findings suggest that to enhance overall life satisfaction as well as satisfaction in the family and food domains in dual-earner families, interventions to reduce depression should include both partners.


Resumen Este estudio exploró las asociaciones "spillover" y "crossover" entre la depresión y la satisfacción con la vida, con la alimentación y con la vida familiar en familias con doble ingreso. Se administraron cuestionarios a 303 parejas con doble ingreso e hijos adolescentes en Temuco, Chile. Ambos miembros de las parejas respondieron la subescala de Depresión de la Escala de Depresión, Ansiedad y Estrés - 21, Escala de Satisfacción con la Vida, Escala de Satisfacción con la Alimentación y la Escala de Satisfacción con la Vida Familiar. Usando el modelo de interdependencia actor-compañero y ecuaciones estructurales, se encontró que la depresión en los hombres se asoció negativamente con sus propios niveles de satisfacción con la vida, con la vida familiar y con la alimentación, así como con los niveles satisfacción con la vida y la vida familiar de su pareja (la mujer). La depresión en mujeres se asoció negativamente con sus propios niveles de satisfacción con la vida, con la vida familiar y con la alimentación, así como con la satisfacción de su pareja (el hombre) con la vida familiar, pero no con su nivel de satisfacción con la vida. No se encontraron efectos cruzados entre la depresión los miembros de la pareja y su satisfacción con la alimentación. Estos hallazgos sugieren que para mejorar la satisfacción con la vida en general, así como la satisfacción en los dominios de la familia y la alimentación en familias doble ingreso, las intervenciones para reducir la depresión deben incluir a los dos miembros de la pareja.

This study has revealed the role of a new factor, perceived correspondence of health effects, in consumer acceptance of functional foods. Using a web survey of 1016 people, we hypothesized and verified the following: when an ingredient does not occur naturally in the carrier but the consumer assigns the same health effect to it as to the carrier, the product's acceptance will be more positive than it would be if an identical health effect was not associated with the carrier and the functional ingredient. Factors influencing consumer acceptance were examined via binary logistic regression models. According to the results, if a functional food developer fortifies the carrier with an ingredient that does not occur naturally in the carrier, the product can expect higher acceptance if the health effects perceived by consumers are properly matched. In general, it has been found that expected taste and awareness of the product were decisive in all demographic and income groups, whereas perceived correspondence of health effects had a lesser, but still positive influence on acceptance.

To study consumers' intention to reduce their dietary salt intake and willingness to purchase salt-reduced food products, as well as the determinants of these, this research relies on data collected through a web survey of 1030 participants in Denmark. The majority of respondents (66.8%) express no intentions to change their dietary salt intake, but 12.6% indicate such intentions, and 20.6% claim to have already implemented a change. Willingness to purchase salt-reduced food products is high but varies across product categories, ranging from 52% for olives to 72% for meat spreads. Personal and social norms reveal the strongest influences on intention to change dietary habits, whereas personal norms, knowledge, and awareness of health consequences exert the strongest influences on willingness to purchase salt-reduced food products. These results suggest that most consumers are willing to purchase salt-reduced food products, even without having a salt reduction goal. These results are relevant for stakeholders and policy makers, as evidence of how consumers respond to salt-reduced food products and their intention to lower their dietary salt intake.

Despite the fact that front-of-pack nutrition labels such as health claims and symbols have received growing attention in consumer behavior research, comprehensive conclusions could not yet be drawn to develop concrete policy actions, owing to the complexity of the subject and a constantly changing market environment. In this study, evidence-based policy recommendations and communication guidelines have been derived from the findings of the EU FP7 project CLYMBOL ("Role of health-related CLaims and sYMBOLs in consumer behavior", Grant Agreement 311963), and have been evaluated and prioritized by European stakeholders using a three-round Delphi method. A moderate level of consensus was achieved and results suggest that policy priority should focus on ways to improve consumer motivation and interest in healthy eating. Consumers' interest in healthy eating could be increased by adopting appropriate communication strategies such as using innovative ways to communicate the importance of healthy eating, which may aim to change the possible negative association between healthiness and tastiness. The highest-rated finding was related to consumers' favorable attitude towards health claims with shorter and less complex messages and health symbols with a visible endorsement. Meanwhile, there was a clear consensus that health claims need to be scientifically substantiated and credible but phrased without using overly complex scientific wordings, in order to be meaningful for consumers. Furthermore, stakeholders from academia and industry believe that consumer awareness about existing health claims should be increased. The identified policy recommendations and communication guidelines stem from recent empirical evidence and provide useful insights that guide future policy development aligning consumer protection issues as well as public health and food marketing communication interests.
